Method

  • 1. Preheat the oven to 180C.
  • 2. Grease and line a 8in cake tin.
  • 3. Mix together by sifting the flour and cinnamon, then add
  • the carrot and nuts.
  • 4. Beat the butter and sugar together until fluffy,then stir in the honey.
  • 5. Put all the dry ingredients in and mix well.
  • 6. Add the lemon juice and turn the mixture into the cake tin.
  • 7. Bake for about 1 hour.
  • 8. Allow the cake to cool completly.
  • 9. Cut it in half if you wish to fill it.
  • 10.For the topping, beat the butter and cheese together briefly and fold in the sugar, then add the lemon juice.
  • 11.Combine these ingredients thoroughly and spread the icing onto the cold cake.

    • 3 tsp. cinnamon
    • 60g mixed nuts. chopped
    • 130g brown sugar
    • 130g honey
    • 1 lemon juice
    • TOPPING
    • 30g soft butter
    • 50g cream cheese
    • 130g icing sugar
    • 1 lemon juice
