- Homemade breadcrumbs will improve the recipe no end. They are so easy to make! Why use the shop ones they are soooo expensive? Plus you can use up that end of bread that you usually chuck away and save even more money. In fact I generally collect up the end pieces of the bread and put them in an airtight bag and keep them in the freezer untill I need to make breadcrumbs. Use any type of bread. I often use several types of bread which makes for very interesting additional flavours for your dish. Just do not use stale bread as you will get stale tasting bread crumbs .... doh!
To make bread crumbs ..... just place bread piece/slices on baking tray and bake in a hot oven for 10 to 15 minutes. Do not forget to turn the pieces over after about 7 minutes so that they dry evenly. Remove them from the oven and allow them to cool.
Now just tear the dried bread into smaller pieces and put them into a food processor. Blend until you get the coarseness you want. I tend to only blend mine for a relatively short period so that the texture remains quite chunky and coarse. Doing it this way then gives me the option to regrind, just the amount I need, if I need finer breadcrumbs.

i make breadcrumbs by putting bread in toaster and just lightly toasting bread and then put in food processor...its quicker than waiting for oven to heat up.

Hi couteaux – Yes, I bet your kids will love these, mine do. I generally serve them with baby corn and broccoli to try and get the balance right. The salmon fingers go down much better than the veg, as you would expect with a 5 year old and a 10 year old – enjoy!
