Method



  • wash and finely chop all the solid ingredients and mix well in a serving bowl, keeping the beetroot until last.

  • Add salad cream and stir in.

  • Note: Salad cream adds to the flavour of the dish and is better than mayonnaise for this recipe. If you don't have spring onions you can substitute a small salad onion.

  • You can also be creative and add additional vegetables (eg chopped sweet peppers) if you wish.

  • Ingredients

    • 1 medium lettuce
    • 2 firm medium tomatoes peeled
    • ΒΌ medium cucumber
    • 1-2 celery sticks
    • 2-3 spring onions
    • 2 hard boiled eggs
    • 1 small cooked beetroot
