Method

  • Very finely chop the red onion.
  • Chop the coriander(cilantro)
  • Add the onions and coriander to bowl and add the requied number of parts required of the oil, vinegar and chilli sauce.
  • Mix well and season with the salt and pepper.
  • (if no garlc pepper, you could add a small squeeze of garlic puree.Very small squeeze)
  • Will be ok in the fridge for at least one week after...Allow to sit out for good while before use from the fridge as the olive oil will set a little.
  • Enjoy with the food/salad of choice!!
  • Tips

    • (try cutting onion in half, thereby cutting through the root side in two so as to speak. Place half onion cut side down on chopping board then slice across the onion, holding it in place, do as fine a slice as possible. Holding in place, turn the onion so you can now slice as finely as possible the other way...this should leave you quite a fine dice - for future ref too!!)

    • 1 Small red onion very finely diced
    • 3 parts Olive oil
    • 1 part Balsamic vinegar
    • 1 part Thai style Sweet chilli sauce
    • small bunch Coriander
    • small pinch Salt
    • Sprinkle Garlic pepper or normal black if none
    • 0.25 part Honey
