Mix the eggs, milk, sweet chilli sauce and coriander in a jug or bowl. Add pinch of salt and pepper.
Heat the pan to quite hot before adding oil, which should only be enough to coat the bottom of the pan. (this will prevent oil burning and tainting your food)
Start with the pepper, then the sausage, then mushroom then the tomato. (cook qhickly as if like stir fry)
Add the egg mix, swirl round the pan. As it starts to set, run the fork through the contents of the pan and swirl the liquid egg around to the edges again.(if necessary - repeat this)
Allow to cook a little longer till almost set.
remove from cooker and sprinkle over the grated cheese.
Place pan under preheated grill and melt the cheese.
Slide onto a warmed plate and serve.
Tips
Sausage can be removed from recipe to allow for vegetarian consumption - just as nice.
