• A simple, comforting supper dish made with store cupboard ingredients

    Ingredients

    • 1 tblsp vegetable oil
    • 1 small onion chopped
    • 1 garlic cloves. crushed
    • 227g brown rice
    • 170g mushrooms. sliced
    • 425ml chicken stock. hot
    • ½ tsp oregano. dried
    • 85g Cheddar Cheese . grated
    • 3 tblsps Parsley. Chopped

    Method

    • Heat the oil in a saucepan and gently fry the onion and garlic until translucent. Stir in the rice and mushrooms. Add the stock and bring to the boil, stirring. Add the oregano and cheese. Pour into a buttered casserole and bake at 180d c/Gas 4 for 30 mins until the rice is tender. Stir in the parsley.

      Serve with a salad maybe.
