Method

  • Heat the oil and fry the onion and celery until lightly browned. Add the garlic and bacon and cook for 2 mins. Stir in the mince and brown it all over, stirring to break up the mince. Blend in the flour, ginger, curry powder, tomato puree and yoghurt. Season well. Bring to the boil and stir in the tomatoes. Transfer everything to a casserole and bake in the oven for about 45 mins at 375d (gas 5). Saute the cucumber in the butter for 2 mins. Season, stir it through the beef, top with the almonds fried in butter and sprinkle with paprika. Serve with some nice bread.

    • 1 tbsp vegetable oil
    • 1 small Onion. Peeled and Sliced
    • 2 sticks Celery (diced)
    • 1 garlic cloves. crushed
    • 50g Bacon (streaky). diced
    • 1 level tbsp Flour
    • 2 level tbsps Curry powder
    • ½ tsp ginger (ground)
    • 1 tsp tomato puree
    • 300ml Natural Yoghurt
    • to taste salt and pepper
    • 227g tomatoes chopped
    • 227g cucumber. matchsticks
    • 50g Butter
    • 28g split blanched almonds
