1. Put the mushrooms into a pan with the oil and cook for 5 mins until browned. Add the ready made mince (see my recipe http://schools.mydish.co.uk/recipe/3499/ready_made_mince).
2. Cook until heated through and the sauce is slightly thickened (add a tbsp flour to thicken if required, then tip the mixture into a medium-sized ovenproof dish. Heat oven to 220°C/fan 200°C/gas 7.
2. Meanwhile, cook the potatoes in a large pan of boiling water for 15 mins until soft. Drain and mash with the milk, then stir in half the spring onions. Spoon over the mince and fluff up. Cook in the oven for 15 mins until the top is lightly browned. Serve sprinkled with spring onions.
This recipe was very nice, but to make it even quicker I used ready made fresh mashed potato, not Smash but the supermarket's ready made mash! Or for a twist some supermarkets do a root vegetable mash!
