Method

  • mix mayonaise,parmesian,artichoke hearts and garlic together in bowl. set aside. In large skillet saute' onions and peppers in olive oil, until carmelized. add chicken and lightly season with garlic salt and pepper to taste. when chicken is lightly brown, transfer to a baking dish and pour artichoke mixture over and cover with mozarella cheese. sprinkle paprika on top. bake at 350 degrees for 45 minutes. enjoy!
  • Tips

    • I recommend jasmine rice as a side dish. it is really a compliment to the meal.

    • 1 cup mayonnaise
    • 1 cup fresh grated parmasan
    • 1 cup marinade artichoke hearts
    • 1 ½ tablespoons Minced Garlic
    • 1 cup mixed peppers
    • 1 small yellow onion (corsely chopped)
    • 2 tablespoons olive oil
    • 6 to 8 medium chicken breasts (sliced in ½)
    • to taste salt and pepper
