Method

  • 1. Combine yeast, sugar, and warm water in a 1-cup glass measuring cup; let stand 5 minutes.

  • 2. Combine flours and salt in a large bowl; make a well in center.

  • 3. Beat egg yolks lightly in a small bowl; add yeast mixture, milk, and butter.
  • 4. Add to dry ingredients, stirring with a whisk until mixture is smooth.
  • 5. Cover with a tea towel. Let mixture stand at room temperature 1 1/2 to 2 hours.

  • 6. Stir mixture to eliminate air bubbles.

  • 7. Beat egg whites at high speed with an electric mixer until stiff peaks form; fold into batter.

  • 8. Drop blini batter by tablespoonfuls onto a hot, lightly greased griddle.

  • 9. Cook until tops are covered with bubbles and edges look cooked; turn and cook until lightly browned.
  • 10. Serve with sour cream and salmon.
