Method

  • 1. Set the oven to moderate.
  • 2. Mix the flour, oatmeal, ginger, mixed spice and sugar together.
  • 3. Heat the milk and treacle together and bring to the boil.
  • 4. Add the bicarbonate of soda and stir until dissolved.
  • 5. Pour over the dry ingredients and mix quiclky.
  • 6. Add the mincemeat to mixture, beat well, then pour into the tin.
  • 7. Bake for 40-50 mins. until the centre is firm to the touch.
  • 8. When cold, cut into 18 triangles.

    • 4 oz plain flour
    • 3 oz medium oatmeal
    • 2 tsp. ground ginger
    • 2 tsp. mixed spice
    • 2 oz sugar
    • ¼ pint milk
    • 3 tbsp. treacle
    • 1 tsp. bicarbonate of soda
    • ½ lb mincemeat
