Oven Roasted Citrus and Vegetables
Method
1. In large bowl, combine all ingredients except orange segments and vinegar.
2. Toss to coat.
3. Pour into a pan.
4. Bake in preheated 400°F oven for 45 minutes, stirring every 15 minutes. During last 15 minutes of cooking, stir in oranges.
5. Remove from oven and add vinegar, toss to coat.
6. Let stand for 10 minutes.
Ingredients
- 1 lb japanese eggplant. sliced ½-inch thick
- ¾ lb banana. sliced
- 1-1 red and yellow bell pepper. seeded and cut into 2 by ½-inch strips
- 1 fennel bulb. trimmed. cut in ½ and thinly sliced
- 1 small onion. sliced ¼-inch thick
- 3 cloves garlic. finely chopped
- 2 tbsp. olive oil
- 2 tsp. ground black pepper
- ½ tsp. sea salt
- ¼ cup balsamic vinegar
- 2 oranges
