Oven Roasted Citrus and Vegetables

Method

  • 1. In large bowl, combine all ingredients except orange segments and vinegar.
  • 2. Toss to coat.
  • 3. Pour into a pan.
  • 4. Bake in preheated 400°F oven for 45 minutes, stirring every 15 minutes. During last 15 minutes of cooking, stir in oranges.
  • 5. Remove from oven and add vinegar, toss to coat.
  • 6. Let stand for 10 minutes.

    Ingredients

    • 1 lb japanese eggplant. sliced ½-inch thick
    • ¾ lb banana. sliced
    • 1-1 red and yellow bell pepper. seeded and cut into 2 by ½-inch strips
    • 1 fennel bulb. trimmed. cut in ½ and thinly sliced
    • 1 small onion. sliced ¼-inch thick
    • 3 cloves garlic. finely chopped
    • 2 tbsp. olive oil
    • 2 tsp. ground black pepper
    • ½ tsp. sea salt
    • ¼ cup balsamic vinegar
    • 2 oranges
