Spaghetti Squash with Citrus Sauce

Method

  • 1. Cut squash in half, remove seeds. Bake cut side down in baking pan containing small amount of water. Bake at 350 degrees for 45 minutes. After cooking, pull strands free with a fork.
  • 2. In skillet sprayed with nonstick cooking spray sauté onion, celery and garlic for 3 minutes; stirring occasionally.
  • 3. Add tomatoes, lemon juice, cumin and red pepper sauce, simmer for 3 minutes.
  • 4. Stir in beans, chiles, mandarin oranges and parsley cook additional 3 minutes.
  • 5. Serve over spaghetti squash.

    • 2 lb spaghetti squash
    • ½ cup onion chopped
    • ½ cup finely chopped celery
    • 2 cloves garlic
    • 2 medium tomatoes. chopped
    • 3 tbsp. lemon juice
    • 2 tsp. ground cumin
    • 8 drops red pepper sauce
    • 1 can black beans. rinsed and drained
    • 4 mandarin oranges. peeled. seeded and chopped into ½-inch pieces
    • ¼ cup parsley leaves
