1. Cut squash in half, remove seeds. Bake cut side down in baking pan containing small amount of water. Bake at 350 degrees for 45 minutes. After cooking, pull strands free with a fork.
2. In skillet sprayed with nonstick cooking spray sauté onion, celery and garlic for 3 minutes; stirring occasionally.
3. Add tomatoes, lemon juice, cumin and red pepper sauce, simmer for 3 minutes.
4. Stir in beans, chiles, mandarin oranges and parsley cook additional 3 minutes.
