Method

  • 1. Mix together the seasoned flour, lemon zest and parsley, pat onto the fish on both sides well, shaking off any excess.

  • 2. Heat the oil in a large frying pan over a moderate heat, cook the fish for 11 to 12 minutes turning occasionally.

  • 3. Drain on kitchen paper and serve with lemon wedges and seasonal vegetables.
