Method

  • •Finely chop the onion.
  • •Cut a cross in the top of the tomatoes and put them in hot water to loosen the skins.
  • •Remove the skins.
  • •Cut the tomatoes into small pieces discarding the seeds.
  • •Wash the peppers and cut them into fine rings.
  • •Heat the butter in a large frying pan.
  • •Add the onion and cook until soft, then add peppers and tomatoes and fry for another 2 to 3 minutes.
  • •Beat the eggs with salt, pepper and paprika powder.
  • •Pour mixture over vegetables.
  • •Stir with a fork until the eggs are set.

  • Serve with nice fresh crusty bread – Turkish bread is ideal

    Ingredients

    • 1 Onion
    • 4 medium Tomatoes
    • 4 Green hot peppers*
    • 8 fresh eggs
    • 1 tsp Mild paprika powder
    • to taste Salt &, Pepper
    • for frying Butter
    •  Fresh crusty bread
    •  * Be careful with the peppers, the Turkish kind is a cross between a capsicum (bell pepper) and a hot pepper. Remove the seeds to make them less fiery.
