Ingredients
- 1 Onion
- 4 medium Tomatoes
- 4 Green hot peppers*
- 8 fresh eggs
- 1 tsp Mild paprika powder
- to taste Salt Pepper
- for frying Butter
- Fresh crusty bread
- * Be careful with the peppers; the Turkish kind is a cross between a capsicum (bell pepper) and a hot pepper. Remove the seeds to make them less fiery.
Method
- •Finely chop the onion.
•Cut a cross in the top of the tomatoes and put them in hot water to loosen the skins.
•Remove the skins.
•Cut the tomatoes into small pieces discarding the seeds.
•Wash the peppers and cut them into fine rings.
•Heat the butter in a large frying pan.
•Add the onion and cook until soft; then add peppers and tomatoes and fry for another 2 to 3 minutes.
•Beat the eggs with salt, pepper and paprika powder.
•Pour mixture over vegetables.
•Stir with a fork until the eggs are set.
Serve with nice fresh crusty bread – Turkish bread is ideal
