Prawns and Pea Noodle Basket

Tips
- Wire basket, available at kitchenware shops, come clipped together. Otherwise, use a large and a small metal Asian straining spoon.
Ingredients
- 700g (1lb/7oz) Raw king prawns
- Oil for deep-frying
- 200g (6½ oz) Fresh egg noodles
- 2 Spring onions, chopped
- 1 Clove garlic, crushed
- ½ Teaspoon Finely grated fresh ginger
- ½ Teaspoon Sesame oil
- ½ Teaspoon Fish sauce
- 100g (3½ oz) Green peas, cooked
- 3 Canned water chestnuts, sliced
- 1 TBSP Chopped fresh mint
- 2 Teaspoons Chopped fresh chives
- 80g (2¾ oz) Snow pea sprouts
- Chive stalks or spring onion greens, to garnish
