Tomato and Mozzarella Tartlets

Method

  • 1. Set the oven to 190 degrees

  • 2. Blend the flour, btter, salt and water together in a food processer.

  • 3. Wrap in cling film and place in fridge (OR YOU CAN USE PRE MADE SHORT CRUST PASTRY)

  • 4. Dice the tomato and mozzarella and mix in the lemon juice and pesto.

  • 5. Cut out 6 small tartlets and put into a muffin tray. Bake for 10 minuets.

  • 6. Add the tomato mix and bake for a further 5 minutes.

  • 7. Serve hot or cold with salad or soup

    Ingredients

    • 125g plain flour
    • 55g Butter
    •  pinch of salt
    • 1tbsp Cold Water
    • 1 Tomato
    • ½ pack mozzarella
    • 1tbsp Pesto
    • 1tsp lemon juice
    •  Pinch of pepper
