Chicken Barbecue Marinade

Method

  • 1. Mix all the ingredients together in a bowl.

  • 2. Place the chicken pieces together in a nonmetallic dish.

  • 3. Pour the marinade over the chicken.

  • 4. Cover the dish with cling film and place in the fridge overnight, turning occasionally - if you can be bothered.

  • 5. Place the chicken straight from the dish onto the barbecue when ready to cook.

  • 6. Use excess marinade left over in the dish to baste the chicken while cooking.
  • Tips

    • Chicken always takes longer to cook on the barbecue than other meat. It is important that chicken is cooked thoroughly so I always part cook the chicken in the microwave for 5 to 6 mins before putting g it on the barbecue. This means it cooks faster and you don’t run the risk of poisoning your entire family.

    • 8 tblesp soy sauce
    • 6 cl vegetable oil
    • 6 cl red wine vinegar
    • 1tsp oregano
    • ½ tsp sweet basil
    • ½ tsp garl
    • ¼ tsp Parsley
    • ¼ tsp black pepper
