Melt the butter in a pan and add the courgettes, onion, celery. Put on the lid and sweat for 20 mins.
Add the spring onions and sweat for 10 mins.
Add the stock and simmer slowly for 30mins.
Liquidise and taste for seasoning.
Add some chopped parsley to garnish.
If using watercress, a bunch is sufficient.
