Quick Starter - Goats Cheese and Red Onion Omlettes

Method

  • take a tiny one portion frying pan and fry up the petits pois & red onion in olive oil

  • If you dont have a small frypan (non-stick is essential) then you can either make one large omlette and serve this as 'wedges' or you can use egg 'rings' in a large pan.

  • Once the vegetables are soft and the onions have started to caramelise, break the egg/s into a separate dish. Mix with a fork but not too much and add a couple of teaspoons of cold water.

  • Add the egg mix into the pan on top of the veggies. Use a slice to gently push the omlette back to prevent it sticking to the pan.

  • Once the base is set place the goats cheese on top and put this under a hot grill until the goats cheese starts to brown and bubble.

    •  seasoning
    • tablespoonful or thereabouts frozen petits pois
    • few slices red onion
    • big thick slice goats cheese
