The Basics

Ingredients

  • 1 Large egg (preferably a double yolker or add an extra yolk)
  •  seasoning
  • tablespoonful or thereabouts frozen petits pois
  • few slices red onion
  • big thick slice goats cheese

Method

take a tiny one portion frying pan and fry up the petits pois & red onion in olive oil

If you dont have a small frypan (non-stick is essential) then you can either make one large omlette and serve this as 'wedges' or you can use egg 'rings' in a large pan.

Once the vegetables are soft and the onions have started to caramelise, break the egg/s into a separate dish. Mix with a fork but not too much and add a couple of teaspoons of cold water.

Add the egg mix into the pan on top of the veggies. Use a slice to gently push the omlette back to prevent it sticking to the pan.

Once the base is set place the goats cheese on top and put this under a hot grill until the goats cheese starts to brown and bubble.

This is actually my partners recipe and he makes it most of the time but he does concur that it is somehow nicer when I do so! I normally add pancetta (I just love bacon and eggs!) whereas he doesn't so perhaps that is the difference. It makes me think of him preparing wonderful food for our guests and so it is one of my favourite recipes.

If you have 'squeamish' eaters, don't tell them that it is goats cheese until they have eaten it - then they are hooked.
