Texan Spare Ribs*

Method

  • 1. Combine the marinade ingredients in a large plastic bag or in a non-metallic dish. Add the ribs.
  • 2. If using a plastic bag, expel as much air as possible from the bag and tie a knot near the opening. If using a dish, cover with all-purpose cling film. Place the ribs in a cool place to marinate for two hours, making sure every so often that the ribs are well-coated with the marinade.
  • 3. Preheat the oven to 200°C / 400°F / Gas Mark 6. Reduce the heat by 20° if using a fan-assisted electric oven.
  • 4. Place the ribs in a roasting tin, discarding any excess marinade.
  • 5. Roast in the centre of the oven for an hour, turning occasionally.
  • 6. The ribs are ready when they are deep golden brown all over.

    • FOR THE MARINADE:
    • 1 400g can Heinz Cream of Tomato Soup
    • 1 large onion. finely chopped
    • juice of ½ an orange
    • 2 tbsp. Worcestershire sauce
    • 1 tbsp. malt vinegar
    • 1 tsp. dry English mustard powder
    • 900g pork spare ribs
    •  Salt and freshly ground black pepper
