1. Combine the marinade ingredients in a large plastic bag or in a non-metallic dish. Add the ribs.
2. If using a plastic bag, expel as much air as possible from the bag and tie a knot near the opening. If using a dish, cover with all-purpose cling film. Place the ribs in a cool place to marinate for two hours, making sure every so often that the ribs are well-coated with the marinade.
3. Preheat the oven to 200°C / 400°F / Gas Mark 6. Reduce the heat by 20° if using a fan-assisted electric oven.
4. Place the ribs in a roasting tin, discarding any excess marinade.
5. Roast in the centre of the oven for an hour, turning occasionally.
6. The ribs are ready when they are deep golden brown all over.
