Method

  • Mix all the ingredients together, except the apple. Mix well with a blender till smooth.
  • Pour in a loaf tin, layer the apples on top (they might sink, but not to worry) and place in the oven for 1 hour at 175C.
  • Tips

    • You can replace the apple with dark chopped chocolate. The cardemom is my secret ingredient, it enhances the citrussy taste. Don't put too much.

      This cake is called a 4 by 4 cake because all main ingredients are equal amounts, that you can change up or down. Just start by weighing the eggs and use that weight for the rest.

      Vanilla sugar is not always available in the supermarket but I found it in a Turkish shop the other day. Maybe Polish shops do it too ?

    • 250gr self raising flour
    • 4 eggs
    • 250 Sugar. granulated
    • 250 Butter (melted)
    • 2 sachets vanilla sugar
    • 1 apples. peeled. cored and thinly sliced
    • pinch salt
    • pinch cardamom powder
    • 1 Lemon Juice (fresh)
