Stuffed Monkeys South African Style Or Butter Biscuits

Method

  • Cream butter and sugar. Add whole eggs and yolks one at a time and then remaining ingredients. (To make butter biscuits - stop at this point, make dough into shapes and bake). For stuffed monkeys, roll out the dough and cut into 4 portions. Cover with the apricot jam, sprinkly the cinnamon and sugar and add raisins and sultanas. Roll up the dough into a sausage, flatten it and cut into biscuit size portions. Bake at gas 5, 375 F 180 C for about 30 - 40 minutes until golden brown.

    • Intriguing name - why Stuffed Monkeys? Made today,used fine cut marmalade as had no apricot jam, but delighted with the result. Will definitely do again.
