" Time for Tea - Another Essie Special "

The Basics

Ingredients

  • 2 cups Self Raising Flour
  • 2 level Tablesp Butter
  • ½ teasp Salt
  • 1 Egg
  • 2 level dessertsp Caster Sugar
  •  Milk* and cream

Method

* Put the cracked egg into a pyrex dish and make quantity with milk to 250 ml mark. Can add cream but not above 250 ml mark.

Sift together flour, salt and sugar. Rub butter into the mixture (does very well in a food processor). Add egg and milk (pour in quickly). It will be a little wet so flour your hands, then roll out not too thin (about 3/4" thick). Cut shape with pastry cutter or glass. Bake in very hot oven (450 F, 230 C or Gas mark 7) for about 10 minutes.

I have just tried this recipe. It is quite a good one, however 10 minutes in the oven is not enough. I cooked them for more than 15 minutes.

Sorry about that - it was my mum's recipe and I can't check with her. It might depend on what kind of oven you have e.g. gas or electric
