Marinated Pork Fillet Roasted On Rhubarb

Method

  • Smash up the sage with the garlic and loosen with a little olive oil.

  • Rub the sage and garlic all over the pork and leave for at least an hour to marinate.

  • Preheat the oven to 220C/425F/gas 7.

  • Season the pork with salt and pepper and wrap the fillets tightly with the parma ham.

  • Chop the rhubarb into finger-sized pieces and place in a roasting dish (not aluminium). Place the pork fillets on the rhubarb and cover with a damp piece of greaseproof paper, tucking in around the sides of the dish.

  • Cook in the hot oven for 15 minutes. Remove the paper and cook for another 15 minutes.

  • Remove the dish from the oven and allow the meat to rest for 5 minutes. Serve the pork (sliced thickly if you like) with the rhubarb and all the lush juices.
  • Tips

    • Fabulous accompanied by English asparagus and roast Jersey Royal potatoes.

    • 10 slices of parma ham
    • 6 sticks of rhubarb
    •  olive oil
