Method

  • 1. Grease and line a big and deep round cake tin with greaseproof paper.

  • 2. Mix fruit, peel and chopped almonds with flour.

  • 3. Cream the butter, sugar and orange and lemon rinds together, than beat in eggs.

  • 4. Fold in the fruit and flour mixture, then spoon into the prepared tin. Arrange whole almonds in circles to decorate if you like.

  • 5. Bake at 170°C for 3 hours.
  • Ingredients

    • 6 oz currants
    • 6 oz sultanas
    • 6 oz  seedless raisins
    • 2 oz blanched almonds. chopped
    • 6 oz  orange peel
    • 12 oz plain flour
    • 10 oz  butter
    • 10 oz brown sugar
    • 1 finely grated rind of orange
    • 1 finely grated rind of lemon
    • 6 eggs
    • to decorate whole blanched almonds
