Hi Bebelle, wow that sounds like a very interesting modification of my recipe. I like the idea of using the chicken. Delighted you mannaged to squeeze in the garlic at the end, I think it does need it to give it flavour.
I used this recipe as a starting point on a day I was out of inspiration and full of intentions to eat more veggies. My mother in law doesn't eat onions or leeks or garlic, so I had to omit those. I did use, sweet potato, peppers, carrots, yellow lentils and stock. Added some garam massala, koriander seeds and turmeric.Put some chicken fillets in the oven in a glass pyrex bowl for half an hour with a little butter, salt, pepper. Added some of the sauce 10 minutes before the end and turned the oven off leaving it uncovered for a while longer. Our dish received a nice squirt of garlic paste, Cynthia's didn't. It was very morish.....
