Method

  • Make the sponge mix according to packet with the egg. It normally requires a few drops of water too. Cook in any old greased baking tin. Leave to cool for 30 mins.

  • Wizz up the sponge into bread crumb style texture.

  • Mix the butter, vanilla, milk and icing sugar to make a kind of butter icing.

  • Mix butter mixture with the cake crumbs untill it holds together.

  • Roll small balls of the mixture in your hands truffle size works well. poke a cocktail stick into the ball and leave.

  • Place on a tray covered with the parchemnt paper and freeze for 20-30 mins.

  • Melt the bar of chocolate over a bain marie (bowl over pan of simmering water)

  • Take out the cake balls from the freezer and dip into the chocolate holding the cocktail stick and place back on the tray. Repeat untill all covered, then roll in the nuts (optional). (u can remove the sticks at this point if you want but u might get a little messy)

  • Chill for 20-30 mins in the fridge and serve.
  • Tips

    • you can roll the cake balls in hundreds and thousands, go great at parties etc.

    Ingredients

    • 1 sachet of cheap sponge mix
    • 1 head tbs Butter
    • 5 heaped tbs icing sugar sifted
    • 1 tsp Vanilla essence
    • Large bar of your favourite chocolate
    • 1 egg required for your cake mix
    • 1 pack cocktail sticks
    • 2 sheets of grease proof paper/baking parchment
    • ½ tbs milk
    • 1 pack chopped nuts

    I love cake, i make celebration cakes for a 2nd job and I came across this recipe on the internet for using up cake scraps from cake making! It's great and they are yummy!
