Mediterranean Stir-fried Vegetables (as A Side Dish For Fish and Meat)

Method

  • 1. To about ½ an inch, slice some courgette, aubergine and seeded red-pepper (removing the skin is optional), halve and quarter some onion.

  • 2. Prepare these ingredients in roughly equal amounts and sizes.

  • 3. Peel a clove of garlic.

  • 4. Keep a handful of whole small ripe (cherry size) tomatoes nearby.

  • 5. Put the vegetables (minus the garlic, onion and tomatoes) in a wok and fill with water so that they are just covered.

  • 6. Put on a very high heat until you see simmering in the centre, not just the outsides.

  • 7. Immediately remove from the heat and drain.

  • 8. Put the wok back on the stove with a medium-high heat and add a small amount of sunflower oil.

  • 9. Now stir-fry the blanched vegetables with the onion, then add the garlic and tomatoes a little later but be careful not to burn or burst them.

  • 10. When the main vegetables are al-dente and starting to brown turn the heat right down, stir in some sea or rock salt, freshly ground black pepper, a little dried oregano and enough virgin olive to coat all of the ingredients, serve.
  • Tips

    • I have not listed the ingredients because I know that you will read the recipe first and will almost certainly have most of the required items in your kitchen. You do not have to stick rigidly to these ingredients, but try and avoid throwing in any vegetable that you have available thinking that it will improve or enhance the dish any more, keep it simple.

    This recipe is a quick but equally good version of oven-roasted vegetables. This is partly to prevent a dominant flavour especially if served alongside other tomato-based dishes.
