Method

  • 1. Liquidise or process the strawberries until smooth.Press through a sieve to remove pips.
  • 2. Whip the double cream until soft peaks starts to form.Roughly chop the meringue shells.
  • 3. Fold the cream and chopped meringue into the strawberry purée.
  • Pour mixture into a 2 pt polybox, cover and freeze overnight until solid.
  • 4. Roughly chop the hazelnuts, put on a baking sheet and brown under a preheated grill.
  • 5. To serve, allow ice cream to stand for a few minutes to soften slightly.
  • Scoop into serving bowls and sprinkle with toasted hazelnuts.
  • Ingredients

    • 3 420 g cans of strawberries in syrup. drained or 450 g fresh strawberries. hulled
    • ¾ pt double cream
    • 8 meringue shells
    • 75 g blanched hazelnuts
