Summer Fruits With Blackcurrant Sauce

Method

  • 1. Put the blackcurrants,orange juice and honey in a pan and cook gently,stirring occasionally,until soft.
  • 2. Mix the arrowroot with the cassis.Add to the pan and cook,stirring until thickened and clear.
  • Cool slightly.
  • 3. Purée in a food processor or blender,then pass through a nylon sieve,pressing as much pulp through as possible.Leave until completely cold.
  • 4. Halve,stone and slice the nectarines.Arrange in individual bowls with the raspberries.
  • 5. Spoon blackcurrant sauce to one side of the fruit.Serve with Greek yoghurt or whipped cream.

    • 1 tbsp honey
    • 1 tsp arrowroot
    • 3 tbsp créme de cassis
    • 6 nectarines
    • 350 g raspberries
