Method

  • 1. Put golden syrup,water,sugar and oil in a saucepan and allow to melt slowly over a very gentle heat.When the mixture is transparent,remove from heat and cool completely.
  • 2. In a food processor mix beat eggs,cooked syrup,flour,spices and baking powder thoroughly.
  • 3. Put the wine in a jug,add the bicarbonata of soda and let it fizz.Then add this to the mixture and mix them well.
  • 4. Pour the cake mixture into 3 greased and parchment lined 2lbs loaf tin or 1 large square tin. /If we use the square tin,the cooking time will be approx.1 1/2 hrs/
  • 5. Cook it in pre-heated oven at 160 degrees/gas Mark 4 for about 40 minutes for loaf tin.
  • 6. Top it with sultanas or with the flaked almonds.
  • Ingredients

    • 1 lb/1 tin golden syrup
    • 1 lb /same amount as the g.syrup water
    • 8 ozs caster sugar
    • 8 fluid ozs vegetable oil
    • 2 eggs
    • 1 lb self raising flour
    • 1 tsp mixed spice
    • 1 tsp ground ginger
    • 1 tsp cinnamon powder
    • 1 tsp baking powder
    • 5 tbsp Kiddush wine
    • 2 tsp bicarbonate of soda
    •  sultanas/flaked almonds for topping
