Method

  • 1. Mix all the ingredients together.
  • 2. Bake at 350F for approximately 1 hour.
  • 3. Serve it with icing sugar on top.

    • Grated carrots are better than shredded as they complement the texture more. Pecan or Walnuts should be shown as ground or crushed or some person will put them in whole - Never Almonds with this recipe, too bitter. Specify the Icing for the topping, it should be very soft and buttery.

    • 3 cups shredded carrots
    • 1 1/3 cups brown sugar
    • 2 cups plain flour
    • 1 tsp salt
    • 1 tsp cinnamon powder
    • 1 cup oil
    • 2 eggs
    • ½ cup ground almonds
    • 3 ozs pecan nuts
    • 2 tsp baking powder
