Artichoke Soup

Method

  • 1. Drain artichokes and coarsely chop.

  • 2. Combine in food processor with potato soup, shallots, garlic, and 1 cup of the vegetable stock. Process until smooth.

  • 3. Pour into large bowl and add remaining ingredients, stir well.

  • 4. Cover and chill until flavours are blended, about 4-6 hours. Garnish with sour cream and fresh dill, if desired. Serves 4-

  • Ingredients

    • 2 x 390g can plain artichoke hearts. drained
    • 400g Heinz potato and leek soup
    • 2 shallots. chopped
    • 1 cloves garlic. minced
    • 4 cups vegetable stock
    • 1 table lemon juice
    •  white pepper
    • 1 cup full cream milk
    • ½ tsp dried dill weed
