Method

  • 1. Beat eggs and sugar well.
  • 2. Add oil and beat again,just till blended.
  • 3. Add sifted dry ingredients.
  • 4. Fols in carrots and nuts.
  • 5. Bake in two greased and floured 9in square or round tins for 40 minutes in a 180C oven.
  • 6. Decorate with icing on top.

    • 2 ½ cups plain flour
    • 1 ¼ cups oil
    • 1 ¼ cups sugar
    • 3 cups carrots.finely grated
    • 2 tsp cinnamon powder
    • 4 eggs
    • 1 tsp bicarbonate of soda
    • 2 tsp baking powder
    • ½ cup pecan nuts.chopped
    • ¾ tsp salt
