Method
1. Beat eggs and sugar well.
2. Add oil and beat again,just till blended.
3. Add sifted dry ingredients.
4. Fols in carrots and nuts.
5. Bake in two greased and floured 9in square or round tins for 40 minutes in a 180C oven.
6. Decorate with icing on top.
Ingredients
- 2 ½ cups plain flour
- 1 ¼ cups oil
- 1 ¼ cups sugar
- 3 cups carrots.finely grated
- 2 tsp cinnamon powder
- 4 eggs
- 1 tsp bicarbonate of soda
- 2 tsp baking powder
- ½ cup pecan nuts.chopped
- ¾ tsp salt
