Method

  • 1. Melt the margarine and honey over a low heat.
  • 2. Cool slightly,then mix in the flour to form a stiff dough.
  • 3. When cool enough to touch,knead on a floured surface to form a smooth dough.
  • 4. Wrap in cling film and chill for 15 minutes.
  • 5. Set oven to moderately hot,Gas Mark 5 or 375F/190C.
  • Make the filling:

  • 1. Melt the margarine,add the milk and raisins and cook gently for 1 to 2 minutes.
  • 2. Add the cinnamon.
  • 3. Peel and thinly slice the banana.Stir into the filling mixture and leave to cool.
  • 4. Press half the chilled dough into the tin,then spread the filling over the pastry.
  • 5. Grate the remaining dough over the filling.
  • 6. Brush the pastry with cold water and sprinkle with the sacter sugar.
  • 7. Bake just above the centre for 35-40 minutes.
  • Leave to cool,then cut into 9 squares.

    • FOR THE PASTRY:
    • 4 oz margarine
    • 2 tbsp honey
    • 7 oz plain flour
    • FOR THE FILLING:
    • 1 oz margarine
    • 2 tbsp milk
    • 3 oz raisins
    • ½ tsp cinnamon powder
    • 1 banana
    • 1 tbsp caster sugar
