Method

  • 1. Remove the crusts from the bread,then soak the bread in the milk and leave on one side.
  • 2. Sift the flour into a bowl.Rub in the margarine until mixture resembles breadcrumbs.
  • Weigh out 4 oz. of the flour mixture for the filling.Stir enough water into the remaining mixture to give a soft,but not sticky dough.
  • 3. On a floured surface,roll out pastry and use to line the tin.Crimp edges with thumb and forefinger.Chill the pastry for 15-20 minutes.
  • 4. Set oven to moderately hot,Gas Mark 5/375F/190C.
  • Make the filling:
  • 5. Mash the soaked bread to a soft crumble and mix in the remaining pastry/breadcrumb mixture.
  • 6. Stir in the golden syrup,saving one halftablespoon for the glaze.
  • 7. Add the mixed spice,mixed peel,vinegar and bicarbonate of soda,and mix well.
  • 8. Pour the filling into the pastry case and bake just above centre for 40 minutes,until dark golden and firm but not set.
  • 9. Remove from the oven and immediately brush the top with the golden syrup and sprinkle with chopped nuts.Leave in the tin to cool.

    • 4 oz White Bread
    • ¼ pt milk
    • 6 oz plain flour
    • 4 oz margarine
    • 8 tbsp golden syrup
    • 1 tsp mixed spice
    • 1 oz Mixed Peel
    • 1 tsp vinegar
    • ½ tsp bicarbonate of soda
    • 1 oz chopped nuts
