2. Rub in butter until mixture resembles breadcrumbs.
3. Add enough water to mix to a stiff dough.Knead lightly.
4. Roll out and use to line flan dish.
5. Bake at 400F/200C/Gas Mark 6 for about 26 minutes or until cooked.
To make Frangipane:
6. Mix cornflour to a smooth paste with a little of milk.Put remainder on to heat.
7. Stir in cornflour paste and cook,stirring until thick and smooth.
8. Remove from heat and beat in egg yolks one at a time.
9. Cook over a gentle heat until mixture thickens.
10. Remove from heat and stir in sugar,crushed sponge fingers and almond essence.Cover and leave until cold.
11. Spread cold Frangipane in base of flan dish.Arrange apricot halves on top.Put redcurrant jelly and lemon juice into a saucepan and heat gently,stirring occasionally.
