Method

  • 1. Sieve flour and icing sugar into a bowl.
  • 2. Rub in butter until mixture resembles breadcrumbs.
  • 3. Add enough water to mix to a stiff dough.Knead lightly.
  • 4. Roll out and use to line flan dish.
  • 5. Bake at 400F/200C/Gas Mark 6 for about 26 minutes or until cooked.
  • To make Frangipane:
  • 6. Mix cornflour to a smooth paste with a little of milk.Put remainder on to heat.
  • 7. Stir in cornflour paste and cook,stirring until thick and smooth.
  • 8. Remove from heat and beat in egg yolks one at a time.
  • 9. Cook over a gentle heat until mixture thickens.
  • 10. Remove from heat and stir in sugar,crushed sponge fingers and almond essence.Cover and leave until cold.
  • 11. Spread cold Frangipane in base of flan dish.Arrange apricot halves on top.Put redcurrant jelly and lemon juice into a saucepan and heat gently,stirring occasionally.
  • Spoon or brush over apricots.

    • PASTRY
    • 8 oz plain flour
    • 2 tbsp icing sugar
    • 5 oz unsalted butter
    •  Water to mix.
    • FILLING
    • 2 tbsp cornflour
    • 1 pt milk
    • 5 egg yolks
    • 2 tbsp caster sugar
    • 4 oz sponge fingers.finely crushed
    • 1 tsp almond essence
    • TOPPING
    • 1 lb. 12 oz can apricot halves.drained
    • 4 tbsp redcurrant jelly or apricot jam
    • 2 tbsp lemon juice
