Risotto with Salami and Vegetables

Ingredients

  • 3 tablespoons olive oil
  • 2 red onions
  • 1 green peper
  • 1 red peper
  • 4oz mushrooms
  • 4 tomatoes skinned and chopped
  • 8oz risotto rice
  • 850 ml hot vegetable stock
  • 8oz salami
  • pinch salt and pepper
  •  grated parmesan cheese to serve

Method

Heat oil in a deep pan,add onions and cook for3-4 mins. Add pepers,mushrooms and tomatoes,stir well and cook for 3 mins.
Add rice and stir to coat. Add a ladleful of hot stock and stir constantly until absorbed.
Continue cooking this way adding a little hot stock at a time and stiring well between each addition. This will take 20-25 mins.
Add the salami with the last ladleful of stock and stir well. The rice should be tender and creamy.
Season to taste and sprinkle with parmesan.
