Method

  • 1. Set the oven to moderate,Gas Mark 4/350F/180C.
  • 2. On a floured surface,roll out the pastry to a rectangle 10x14 inches and use to line the tin.Prick well with fork.
  • 3. Cream the butter with the sugar until light and fluffy,then beat in eggs,one at a time.
  • 4. Stir in the ground almonds,almond essence and flour.
  • 5. Peel,core and chop the pears and fold into the almond mixture.
  • 6. Spread the mixture into the pastry case and sprinkle with flaked almonds.
  • Bake above the centre of the oven for 35-40 minutes.Allow to cool and then cut into 12.

    • 7 ½ oz packet of frozen puffy pastry.thawed
    • 2 pears
    • 3 oz butter or margarine
    • 5 oz caster sugar
    • 2 eggs
    • 4 oz ground almonds
    • ½ tsp almond essence
    • 2 oz plain flour
    • ½ oz Flaked almonds
