Method

  • 1. Set oven to moderate hot,Gas Mark 5/375F/190C.
  • 2. In a saucepan,gently melt the butter or margarine.Allow to cool.
  • 3. Whisk the eggs with the sugar until mixture is thick and leaves a trail,then mix in grated lemon rind.
  • 4. Fold in the flour,alternating with the melted butter or margarine.
  • 5. Spoon the mixture into the prepared tin and level the surface.
  • 6. For the topping,place thin slivers of butter evenly over the cake and sprinkle generously with the sugar for the topping.
  • 7. Bake just above centre in the pre-heated oven for 20-25 minutes.Leave to cool in the tin before cutting into fingers.

    • 6 oz butter or margarine
    • 4 eggs
    • 4 oz caster sugar
    • ½ lemon rind.grated
    • 8 oz self raising flour.sifted
    • FOR THE SUGAR TOPPING:
    • 2 oz butter
    • 4 oz caster sugar
