Method

  • 1. Set the oven to fairly hot, Gas Mark 6/400F/200C.
  • 2. Roll out the pastry and line the tins or patty tins.Prick the base with a fork.
  • 3. Make the filling:
  • Mix all the ingredients together for about 1 minute or until well mixed.
  • Place 1 tbsp of the mixture on the bottom of each tartlet,and bake just above the centre of the oven for 15 minutes or until the pastry is golden brown.
  • 4. Make the topping:
  • Drain the juice from the mandarin oranges.In a small pan blend the arrowroot with a little of the juice,then stir in the rest.Bring to the boil,stirring and boil for half a minute.
  • Remove from the heat and add sugar to taste.Place mandarin segments on top and spoon a little of the glaze over the top of each tartlet.
  • Ingredients

    • 1 basic tart pastry with ½ beaten egg
    • FOR THE FILLING:
    • 4 oz cream cheese
    • ½ egg
    • 1 oz sugar
    • 1 oz ground almonds
    • ½ tsp Vanilla essence
    • FOR THE TOPPING:
    • 11 oz can of mandarin oranges plus juice
    • 1 tsp arrowroot
    •  sugar to sweeten
