Almond Biscuits

Method

  • 1. Sift flour on to a marble slab.
  • 2. Mix ground almonds in with it.
  • Make a well in the centre.
  • 3. In it place the butter,castor sugar,salt and egg yolks.
  • Using finger tips of one hand,pinch and work these last four ingredients together until well blended.
  • Then draw in flour and ground almonds and knead lightly until smooth.
  • Chill for 1 hour.Then roll out fairly thinly and cut into rounds with a biscuit cutter.
  • 4. Place rounds on to a baking sheet lined with Baking Parchment.
  • 5. Brush with beaten egg.Cover with almonds.Dust with castor sugar.
  • 6. Bake in preheated oven 375F/190C/Gas Mark 6 for 10-15 minutes.
  • Ingredients

    • 4 ¼ oz plain flour
    • 1 ¾ oz ground almonds
    • 1 ¾ oz butter
    • 2 oz castor sugar
    •  salt
    • 2 egg yolks
    • TO FINISH:
    • ½ egg.beaten
    • 1 oz almonds. ground finely
    •  Castor sugar for dusting.
    •  Bakewell Baking Parchment
