Brocolli & Stilton Soup

Method

  • Chop all the vegetables in to equal sized cubes.

  • Place in large pan and add 1.5 pints of water and bring to the boil. Boil the remaining half a pint of water and make the stock.

  • Add the stock and season with salt and pepper, turn the heat down to simmer for 30 minutes or until all the vegetables are soft.

  • Once the vegetables are cook blend until smooth. Add the Marmite and return to the heat.

  • To serve; spoon into bowls and crumble stilton on the top.


  • Can be frozen before the stilton is added.

    • 1 Carrot
    • 2 Heads of Brocolli
    • 1 Stick of Celery
    • ΒΌ Swede
    • 2 Vegetable Stock Cubes
    • 2 tsp Marmite
    •  Salt Pepper to taste
    • 2 Pints of Water
    •  Crumbled Stilton to Garnish
