Proscuitto Wrapped Scallops
Method
1. Place the lemon juice, olive oil parsley and black pepper in a bowl and mix well.
2. Add the scallops and turn to coat thoroughly.
3. Wrap each scallop with a thin slice of Proscuitto and secure with a toothpick.
4. Place on your barbeque grill and cook for 5 minutes, basting with the olive oil mixture.
5. Turn, baste with more of the olive oil mixture and continue to cook for a further 8-10 minutes. Serve immediately
Ingredients
- 1 tbsp. lemon juice
- 1 tbsp. olive oil
- 1 tbsp. freshly chopped parsley
- 12 Scallops. shelled. cleaned and dried
- 12 thin slices Proscuitto Ham
- to taste salt and pepper
