Proscuitto Wrapped Scallops

Method

  • 1. Place the lemon juice, olive oil parsley and black pepper in a bowl and mix well.



  • 2. Add the scallops and turn to coat thoroughly.



  • 3. Wrap each scallop with a thin slice of Proscuitto and secure with a toothpick.



  • 4. Place on your barbeque grill and cook for 5 minutes, basting with the olive oil mixture.



  • 5. Turn, baste with more of the olive oil mixture and continue to cook for a further 8-10 minutes. Serve immediately

    • 1 tbsp. lemon juice

    • 1 tbsp. freshly chopped parsley
    • 12 Scallops. shelled. cleaned and dried
    • 12 thin slices Proscuitto Ham
    • to taste salt and pepper
