Method

  • Make sure that the mussels are debearded and clean. Discard any open or broken ones.
  • In a large lidded pan heat the oil and add the finely chopped shallots and garlic. Heat gently for 1 minute.
  • Then add the mussels and beer and stir together.
  • Turn up the heat and shake the pan every minute.
  • Cook until the mussels are open and cooked.
  • Discard any unopen mussels.
  • Serve in the juice topped with parsley alongside a rocket salad and with rustic bread.

    • 1 kg mussels
    • 3 tbsp fresh parsley. chopped
    • 1 bottle quality beer
    • 2 shallots
    • 1 clove garlic
    • 1 tbsp olive oil
