pre heat oven to 180c (150c for fan assisted). butterfly the chicken breast (cut nearly through sideways then fold out so the breast is twice as wide and half as thick). thinly coat the bottom of an oven proof dish with olive oil, sprinkle majoram or herb/s of your choice over the surface of the oil, place the chicken on the herb oil then grate a 12mm thick coating of cheese over the top. whack it in the oven for 20mins. done!
