Method
1. Place the raw broccoli, raw noodles and cashew nuts in a bowl.
2. Blend all the dressing ingredients.
3. Pour the dressing over the salad only when you are ready to server, or else it goes soggy.
4. Dressing can be made couple of days in advance and kept in fridge.
Ingredients
- 3 tbsp. red wine vinegar
- 2 sheets Dried noodles (sharwoods) broken up into small pieces
- 2 heads Broccoli cut into small pieces
- 1 large handful unsalted. dried cashew. broken up into small pieces
- DRESSING
- ½ red onion
- 1 cup mayonnaise
- ½ cup caster sugar
- 3 tblspn red wine vinegar
