Method

  • 1. Place the raw broccoli, raw noodles and cashew nuts in a bowl.

  • 2. Blend all the dressing ingredients.

  • 3. Pour the dressing over the salad only when you are ready to server, or else it goes soggy.

  • 4. Dressing can be made couple of days in advance and kept in fridge.


  • Ingredients

    • 3 tbsp. red wine vinegar
    • 2 sheets Dried noodles (sharwoods) broken up into small pieces
    • 2 heads Broccoli cut into small pieces
    • 1 large handful unsalted. dried cashew. broken up into small pieces
    • DRESSING
    • ½ red onion
    • 1 cup mayonnaise
    • ½ cup caster sugar
    • 3 tblspn red wine vinegar
